- 1 tbsp vegetable oil (cooking oil)
- 3/4 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 &1/4 cup(250 g) granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3 large eggs (total weight without shell=155g)
- 50 g milk chocolate chips
- 1 tsp coffee powder dissolved in 1 tbsp warm milk
Instructions
- Lightly grease an 9x9-inch baking pan with butter, line with parchment paper leaving overhang on all sides, grease the parchment paper with butter, set aside.
- Cut unsalted butter into small cubes and put into a heat safe bowl, roughly chop dark chocolate and add into the bowl.Add cooking oil.
- Fill a small saucepan about a quarter full with hot water, then place the bowl over the saucepan, make sure bowl does not touch the water. Let butter and chocolate melt over a low heat, stirring occasionally to mix them until well combined, remove the bowl from the pan, set aside to cool down to the room temperature.
- Take a large bowl, add eggs, salt, sugar and vanilla extract, beat them at medium speed until it looks like a thick batter (about 9-10 minutes)
- With the mixer on, pour in the slightly cooled butter and chocolate mixer and blend until smooth.
- Add in the coffee mixture.
- Sift in the all purpose flour and cocoa powder and use a rubber spatula to gently fold until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake in the preheated oven at 160*C/320*F (fan oven) for 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs.
- Allow them to cool on a cooling rack, use the parchment paper to lift the brownies out of the pan, cool completely before slicing.
- You can store them at room temperature for 3days or keep in the fridge for up to a week.
NOTES
- Brownies are best eaten within a day or two of baking.
- You can store them at room temperature for 3 days or keep in the fridge for up to a week or two months in the freezer.
