Best Fudgy Brownies

Perfect crispy and crackly top, a super fudgy centre, loaded with melted chocolate chips and chocolate chunks, these fudgy brownies are honestly irresistible! They are surely gonna be your new favourite recipe! Much better than Box brownies and you will love this fudgy brownie recipe once you try it out yourself.

My daughter and I are huge chocolate lovers and if it's in the form of these brownies then even better! You gotta be so careful around these brownies because they are dangerously addicting! 🤭  And when i say DANGEROUSLY addicting, I mean it! We both had a really hard time stopping ourselves from eating them all up before we could even get one pic.

Because it’s very quick and easy to make recipe with few basic ingredients. Whenever you are craving for chocolate, you can make them easily and they will be ready within an hour. These homemade brownies are fudgy and chewy and have the perfect crackly and shiny top.

Ingredients for fudgy Brownies

This homemade brownie recipe is very easy to make. Here are the ingredients required to make these decadent brownies.

  • Cocoa powder: Always use high quality cocoa powder, if it’s not good, it will affect the texture.
  • Eggs: Eggs should be at room temperature. They help the brownies to rise while baking since there is no baking powder used.
  • Sugar: It adds sweetness, balances the taste of dark chocolate and bitterness of unsweetened cocoa powder.
  • Semisweet chocolate: I used 59% dark chocolate. Always use good quality chocolate. You can also use milk chocolate or dark semisweet chocolate or pure dark bitter chocolate bars depending on your taste.
  • Unsalted butter: Unsalted butter is the best to add as you can control the amount of salt in the recipe. Butter gives the flavour to the brownies.
  • Little vegetable oil: You can use any vegetable oil. I used here sunflower cooking oil. Just add 1 tbsp oil to keep them soft when cold.
  • Vanilla extract: Pure vanilla extract gives the real flavour to the brownies. Don’t use essence which is not pure
  • All-purpose flour: To make fudgy brownies we don’t use a lot of flour. A lot of flour will result in a more cakey brownie.
  • Salt: Salt is used to enhance the flavours. You will add just a little bit that makes the difference. Salt also helps to bring out the sweetness.
  • Coffee: If you add coffee powder to the brownie, it will give you a deep flavour. But it is totally optional.
  • Chocolate chips: Chocolate chips are added to get shiny crust. Cocoa butter from the chocolate chips makes shiny crust. So don’t forget to add chocolate chips to the recipe. You can use milk chocolate chips or chopped chocolate.

How to make the best fudgy brownies?

Step 1: Lightly grease an 9x9 inch pan with butter, line with parchment paper leaving overhang on all sides, grease the parchment paper with butter, set aside.

Step 2: Cut unsalted butter into small cubes and put into a heat safe bowl, roughly chop dark chocolate and add into the bowl.Add cooking oil.

Step 3: Fill a small saucepan about a quarter full with hot water, then place the bowl over the saucepan, make sure bowl does not touch the water. Let butter and chocolate melt over a low heat, stirring occasionally to mix them until well combined, remove the bowl from the pan, set aside to cool down to the room temperature.

Step 4: Take a large bowl, add eggs, salt, sugar and vanilla extract, beat them at medium speed until it looks like a thick batter (about 9-10 minutes)

Step 5: With the mixer on, pour in the slightly cooled melted butter and chocolate mixer and blend until smooth.

Step 6: Add in the coffee mixture.

Step 7: Sift in the all purpose flour and cocoa powder and use a rubber spatula to gently fold until just combined.

Step 8: Fold in the chocolate chips.

Step 9: Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 10: Bake in the preheated oven at 160*C/320*F (fan oven) for 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs.

All the tips and tricks to get the best fudgy brownies!

  1. Good quality ingredients: Always use good quality ingredients. Good quality chocolate can make a difference. Good quality cocoa powder can change the texture. Cheap cocoa powder makes the brownies denser and drier from the top.
  2. Measure your flour correctly: A lot of flour will result in a more cakey brownie, so measure your flour correctly. The best way to measure your flour is by a digital scale. If you don’t have one then spoon the flour into the measuring cup and then scrape a knife across the top of the measuring cup to level the flour.
  3. Sift the dry ingredients: Sift the flour and cocoa powder to avoid lumps if present.
  4. Remember to add coffee: Coffee helps to enhance the chocolate flavour so gives the deep flavour to the brownies, but it is totally optional.
  5. Beat the eggs and sugar for longer time: At least 10 minutes beating is required to get fudgy brownie.It will incorporate air in the batter that will make your brownies fudgy and tender and will dissolve sugar very well that will dissolve sugar very well that will make shiny crust on top.
  6. Don’t over bake your brownies: If you want the fudgy brownies, don’t over bake them. Brownies are easy to over bake so keep an eye on them as your oven may work differently. Brownies should be under-done to get fudgier texture as they will continue baking and set in the hot pan out of the oven. After 20 minutes of baking, take the brownies out of the oven and hit the pan on your kitchen counter, this will crack the top of the brownies and make them extra fudgy, return the pan to the oven and bake for more 10 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs, unlike cakes.
  7. Cool completely before slicing: Allow them to cool before slicing. Use the parchment paper to lift the brownies out of the pan after 15-20 minutes. To get the perfect cut, dip your knife in hot water and tap it dry with tissue paper before each cut.

WHAT'S THE SECRET TO A SHINY AND CRACKLY TOP?

  • Beat eggs and sugar together for at least 9-10 minutes until it looks like a thick batter. It will dissolve sugar very well that makes shiny crust on top.
  • Chocolate chips are added to get shiny crust as cocoa butter from the chocolate chips makes shiny crust.
  • After 20 minutes of baking, take the brownies out of the oven and hit the pan on your kitchen counter, this will crack the top of the brownies. Return the pan to the oven and bake for more 10 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs.
